Why Besan Laddu Turns Out Grainy (And Why That Is Right)

A good besan ladu should not be smooth like fudge. It should break open with an open, sandy crumb that collapses on the tongue.

It starts with the flour

Coarser besan gives that texture. Very fine besan behaves like dough and sets dense.

Then it is the roast

Low flame, constant movement, and you stop at the moment the aroma turns nutty. Rushing the roast is the most common reason home batches disappoint.

And finally the ghee

Ghee is added warm, not hot, and the mixture is allowed to cool before rolling. Roll it too warm and the ladu tightens as it sets.

Our besan laddu is made in small batches for exactly this reason — besan does not roast evenly in bulk.
