About Moong Ladu

Moong dal ladu is quieter than its cousins. The dal is roasted only until it turns pale gold — a shade further and the sweetness turns flat — then ground and worked with ghee until it holds without pressing.

The result is fine-grained and soft, less rich on the palate than besan, with a clean finish that does not sit heavy. We finish each one with chopped pistachio.

It is the ladu we recommend to anyone who finds most Indian sweets too intense, and the one that disappears fastest from a festive thali.
